Spelt’s naturally high water solubility makes it easy for our bodies to absorb all those wonderful nutrients. Spelt is higher in protein and B complex vitamins than wheat, and also easier to digest. It’s a great source of fibre, manganese and copper, as well as simple and complex carbohydrates.

Soak spelt overnight before cooking. Cover with water rising one inch above the grain. Bring to a boil. Simmer on low heat for one hour in covered pot. Cook until chewy and soft.
