Whole wheat bread flour is as nutritious as flour can be - it is slowly stone-milled protecting the precious nutrients in the flour, especially the germ which can easily be destroyed with commercial milling processes. The flour is then left unsifted and brought to you as unfiltered as possible. We'd recommend using half whole wheat and half white bread flour to start and adjusting the proportions as you see fit. Whole wheat flour does require a little extra water so bear that in mind while using this in your baking.
